- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- - Budgen Mission 6 Tortillas Plain 368G
- - Longley Farm Freshly Soured Cream
- 500G Organic Black Turtle Beans, 500G
- 200G Arla Lactofree Mature Cheddar Cheese
- - Mccormick Cumin Powder
- - Ktc Minced Garlic Paste
- - Schwartz Paprika
- 100G Natco Kashmiri Chilli Powder, 100G
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Prepare the sweet potato pakora as instructed on the package. Set aside once ready.
- 3. In a large skillet, heat a little cooking oil over medium heat. Add 1 diced onion and 2-3 minced garlic cloves, sauté until the onion becomes translucent.
- 4. Add 1 diced red capsicum to the skillet, followed by the organic black turtle beans. Stir and cook for 5 minutes.
- 5. Stir in the prepared sweet potato pakora, 1 teaspoon of cumin (jeera), 1 teaspoon of paprika, 1/2 teaspoon of Kashmiri chilli powder, and salt to taste. Mix well and allow the flavors to combine for another 5 minutes.
- 6. In a small bowl, mix 1 tablespoon of rice flour with a bit of water to form a slurry. Add to the skillet mixture to slightly thicken it.
- 7. Take a tortilla and place a generous amount of the sweet potato and black bean mixture down the center. Roll it up and place seam-side down in a baking dish.
- 8. Repeat with remaining tortillas till the filling is used up.
- 9. Pour sour cream over the top of the enchiladas and sprinkle generously with lactofree mature cheddar cheese.
- 10. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
- 11. Serve hot, garnish with additional paprika if desired, and enjoy your delicious sweet potato and black bean enchiladas!
