Ingredients

  • 1 Kg Yellow/White Onion 1kg
  • 1 Piece Buy Fresh Courgettes Zucchini Online | Alli Bhavan 750g
  • 6 X 400G Cirio Polpa Finissima Finely Chopped Italian Tomatoes
  • 1kg 1kg Green Pepper
  • 370G Belazu Mixed Beans
  • 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
  • - Ktc Vegetable Oil
  • 500G Aunt Bessie'S Maple & Thyme Glazed Carrots
  • - Chings Red Chilli Sauce

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a large Dutch oven, heat 2 tablespoons of cooking oil over medium-high heat. Add 1 diced onion and sauté until softened, about 5 minutes.
  3. 3. Stir in 3 sliced carrots, 2 chopped zucchinis, 2 diced tomatoes, and 1 chopped green bell pepper. Cook for 5-7 minutes, stirring occasionally.
  4. 4. Add 3 1/2 cups of vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 45 minutes, stirring occasionally.
  5. 5. Stir in 2 cans of drained and rinsed beans and 1 cup of chili sauce. Simmer for an additional 15 minutes to allow the flavors to meld.
  6. 6. Taste and adjust seasoning if needed. Serve hot and enjoy your hearty vegetable chili.
