Instructions
- 1. Preheat your oven to 200°C (180°C fan) or Gas Mark 6. Line a large baking tray with parchment paper.
- 2. Prepare the vegetables: Slice 4 large portobello mushrooms, 3 mixed-color bell peppers (red, yellow, and green), and 1 large red onion into thin strips.
- 3. In a large mixing bowl, combine 3 tbsp olive oil, 2 tsp smoked paprika, 1 tsp ground cumin, 1/2 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp onion powder, and a pinch of salt and pepper. Toss the sliced vegetables in this spice mixture until evenly coated.
- 4. Spread the seasoned vegetables in an even layer on the lined baking tray. Roast in the preheated oven for 20 minutes, stirring halfway through, until tender and slightly charred.
- 5. While the vegetables are roasting, warm 8 small whole wheat tortillas in a dry skillet over medium heat for 1 minute per side or wrap them in foil and place in the oven for the last 5 minutes of roasting.
- 6. Prepare the toppings: Dice 1 ripe avocado, chop 50 g fresh coriander, crumble 100 g feta cheese, and slice 1 lime into wedges. Optionally, prepare a quick salsa by mixing 2 diced tomatoes, 1/4 diced red onion, 1 tbsp lime juice, and a pinch of salt.
- 7. Once the vegetables are roasted, transfer them to a serving dish. Set up your fajita bar with the warm tortillas, roasted vegetables, and prepared toppings, allowing everyone to assemble their own fajitas.
- 8. Serve immediately with lime wedges on the side for an extra burst of zesty flavor.
