  • 1 Kg Carrots - 1kg
  • 100 G Jumbo Garlic 100g
  • 1 Bunch Spring Onions 1 Bunch
  • 1 L Crisp N Dry Oil
  • 1 Kg White Granulated Sugar
  • - Amoy Dark Soy Sauce
  • 200G Daesang Gochujang Red Pepper Paste 200g

Instructions

  1. 1. Prepare the vegetables: Peel and slice the carrots into thin strips. Slice the courgettes (zucchini) into similar-sized strips. Finely chop the spring onions, separating the white and green parts. Mince the garlic.
  2. 2. Heat a large pan or wok over medium heat and add 2 tablespoons of Crisp N Dry Oil.
  3. 3. Once the oil is hot, add the minced garlic and the white parts of the spring onions. Sauté for 1-2 minutes until fragrant.
  4. 4. Add the sliced carrots and courgettes to the pan. Stir-fry for 3-4 minutes until they start to soften.
  5. 5. In a small bowl, mix 2 tablespoons of Daesang Gochujang Red Pepper Paste, 1 tablespoon of Amoy Dark Soy Sauce, and 1 tablespoon of White Granulated Sugar. Stir until the mixture forms a smooth sauce.
  6. 6. Add the sauce mixture to the pan with the vegetables. Stir well to coat the vegetables evenly.
  7. 7. If using pre-cooked tteok (rice cakes), add them to the pan now. Stir gently to combine and allow the rice cakes to heat through, absorbing the flavors of the sauce. If the sauce becomes too thick, add a splash of water to loosen it.
