Instructions
- 1. Defrost 2 salmon fillets in the refrigerator if frozen.
- 2. In a shallow dish, place the salmon fillets and pour 1/4 cup soy sauce over them. Marinate in the refrigerator for 30 minutes, flipping halfway through.
- 3. Preheat the oven to 400°F (200°C). Cut 2 medium potatoes into wedges and toss them with 1 tbsp olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and crispy.
- 4. While the potatoes roast, steam 1/2 lb broccoli florets in a steamer basket over boiling water for 5-7 minutes, until tender but still vibrant green.
- 5. Heat 1 tbsp olive oil in a skillet over medium heat. Remove the salmon from the marinade and cook for 3-4 minutes per side, or until the fish flakes easily with a fork.
- 6. Plate the salmon alongside the roasted potatoes and steamed broccoli. Serve immediately.
