Ingredients
- 250G Fresh Pasta Co Fresh Egg Lasagne Sheets
- - Cawston Press Pressed Tomato Juice
- 500 G Marco Alimentari Italian Ricotta Cheese
- 350G Mr Organic Cherry Tomato Pasta Sauce
- 1 L Crisp N Dry Oil
- 400 G Trs Coriander Powder
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Preheat your oven to 180°C (350°F).
- 2. Prepare the tomato sauce: In a medium saucepan, heat 2 tablespoons of cooking oil over medium heat. Add 1 teaspoon of cumin seeds and let them sizzle for 30 seconds. Stir in 500ml of tomato juice, 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and a pinch of salt. Simmer for 10-15 minutes until the sauce thickens slightly.
- 3. Prepare the ricotta mixture: In a bowl, mix the ricotta cheese with a pinch of salt and 1 teaspoon of dried coriander leaves. Set aside.
- 4. Blanch the fine beans: Bring a pot of salted water to a boil. Add the fine beans and blanch for 2-3 minutes until tender but still crisp. Drain and set aside.
- 5. Assemble the lasagna: In a baking dish, spread a thin layer of the prepared tomato sauce on the bottom. Place a layer of lasagne sheets on top. Spread a layer of the ricotta mixture over the pasta, followed by a layer of blanched fine beans. Add another layer of tomato sauce. Repeat the layering process until all ingredients are used, finishing with a layer of tomato sauce on top.
- 6. Optional garnish: If desired, add a small amount of carrot pickle on the side of the dish as a tangy accompaniment. Note that this is not a traditional lasagna ingredient but can add an interesting flavor contrast.
- 7. Bake the lasagna: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbling.
- 8. Let the lasagna rest: Remove the lasagna from the oven and let it rest for 10 minutes before serving. This will help the layers set and make it easier to slice.
- 9. Serve and enjoy: Slice the lasagna into portions and serve warm. Optionally, you can pair it with a side salad or garlic bread for a complete meal.
