Instructions

  1. 1. Preheat your oven to 200°C (180°C fan) and season the pork chops generously with salt, pepper, and a pinch of dried oregano on both sides.
  2. 2. Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat. Add the pork chops and sear for 2-3 minutes on each side until golden brown. Transfer the skillet to the oven and roast for 10 minutes or until the pork chops reach an internal temperature of 63°C. Remove from the oven and let rest under foil.
  3. 3. While the pork chops cook, heat 1 tbsp olive oil in a medium saucepan over medium heat. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  4. 4. Add the drained and rinsed cannellini beans to the saucepan along with the chicken stock, rosemary sprig, and a pinch of salt and pepper. Simmer gently for 10 minutes, stirring occasionally.
  5. 5. Stir in the double cream and grated Parmesan cheese into the beans. Simmer for another 2-3 minutes until the mixture becomes creamy and thickens slightly. Remove the rosemary sprig and adjust seasoning to taste.
  6. 6. Plate the pork chops alongside the creamy white beans. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan. Serve immediately and enjoy!
