  1. 1. Begin by bringing a large pot of salted water to a boil for the rigatoni pasta.
  2. 2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the Italian sausages (casings removed) and cook for 5-7 minutes, breaking them into small pieces with a wooden spoon until browned.
  3. 3. Add the diced onion and minced garlic to the skillet. Cook for 3-4 minutes until softened and fragrant.
  4. 4. Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, and a pinch of chili flakes (optional). Simmer the sauce for 12-15 minutes over low heat, stirring occasionally.
