Instructions

  1. 1. Fill a large pot with water, add a generous pinch of salt, and bring to a boil. Cook the linguine according to the package instructions until al dente (about 10 minutes). Reserve 200 ml of pasta water before draining and set the pasta aside.
  2. 2. While the pasta cooks, heat the olive oil in a large, deep skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. 3. Add the shrimp to the skillet in a single layer, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. 4. In the same skillet, reduce the heat to low and add the butter. Once melted, stir in the flour to create a roux. Cook for 1 minute, stirring constantly.
  5. 5. Gradually pour in the double cream, whisking continuously to combine. Add the lemon zest, lemon juice, and grated Parmesan cheese, and stir until the sauce is smooth and slightly thickened (about 3-4 minutes).
  6. 6. Slowly add the reserved pasta water, a little at a time, to loosen the sauce to your desired consistency. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  7. 7. Return the cooked shrimp to the skillet, along with the drained linguine. Toss everything together gently, ensuring the pasta and shrimp are coated evenly in the creamy sauce.
  8. 8. Sprinkle the chopped parsley over the top and serve immediately. For an extra touch, garnish with additional Parmesan cheese and a wedge of lemon on the side.
