Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a small saucepan, combine 1 1/2 cups vegetable broth, 1 can of tomato sauce, and 1 package of mixed herbs. Simmer uncovered for 10 minutes, stirring occasionally.
  3. 3. In a mixing bowl, combine 1 cup shredded mozzarella cheese, 1 cup ricotta cheese, 1/2 cup grated parmesan cheese, 2 tablespoons chia seeds mixed with 6 tablespoons water, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Mix until smooth and well combined.
  4. 4. Cook 8 cannelloni shells in boiling water according to the package instructions until al dente. Drain and let them cool slightly.
  5. 5. Stuff each cooked shell with about 1/4 cup of the cheese mixture, being careful not to tear the shells.
  6. 6. Spread a thin layer of the prepared tomato sauce mixture on the bottom of a baking dish. Arrange the stuffed shells in a single layer over the sauce.
  7. 7. Pour the remaining tomato sauce mixture evenly over the stuffed shells. Sprinkle the remaining 1 cup of shredded mozzarella cheese on top.
  8. 8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
