- 3 X 400G Garofalo Chopped Italian Tomatoes
- 830G Turkish Tomato Paste, 830G
- 395G D'Aucy Chopped Spinach
- 227G Paxo Golden Breadcrumbs
- - Schwartz Garlic Salt
- - Ktc Vegetable Oil
Instructions
- 1. In a mixing bowl, combine 1 cup chopped spinach, 1/4 cup bread crumbs, 1 egg, 1 tsp garlic salt, and 2 tbsp grated parmesan cheese. Mix well to form a cohesive filling.
- 2. Lay out thin slices of paneer or tofu on a clean surface. Spread a spoonful of the spinach mixture evenly over each slice.
- 3. Roll each slice tightly, as you would for a jelly roll, and secure with wooden picks to hold the shape.
- 4. Heat 2 tbsp oil in a large skillet over medium heat. Place the rolls in the skillet and cook until golden brown on all sides, about 5-7 minutes.
- 5. Remove the rolls from the skillet and set aside. In the same skillet, add 1 cup spaghetti sauce, 1 chopped tomato, and 2 tbsp tomato paste. Stir and simmer for 5 minutes.
- 6. Return the rolls to the skillet, spooning the sauce over them. Cover and cook for an additional 5 minutes to allow the flavors to meld.
- 7. Serve the spinach rolls hot, garnished with extra parmesan cheese if desired.
