Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Cook 2 cups of fresh spinach in a skillet over medium heat until wilted, about 3-4 minutes. Drain any excess liquid and set aside.
- 3. In a large mixing bowl, whisk together 1 egg, 1/2 cup sour cream, 1/4 cup low-fat milk, 3 tablespoons shredded mozzarella cheese, 2 teaspoons finely chopped shallot, 1/2 teaspoon salt, and 1/8 teaspoon black pepper until well combined.
- 4. Add the cooked spinach and 4 ounces of cooked tagliatelle to the bowl. Mix until the pasta and spinach are evenly coated with the sauce.
