Instructions

  1. 1. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Add 3/4 cup of finely chopped onion and sauté until softened, about 3-4 minutes.
  2. 2. Stir in 1/2 teaspoon of garlic powder, 1/2 teaspoon of dried basil, 1/2 teaspoon of italian seasoning, and 1/2 teaspoon of salt. Cook for another minute to release the aromas.
  3. 3. Add 1 can (6 ounces) of tomato paste and 1/2 cup of vegetable broth to the skillet. Stir well and let the mixture simmer for 5 minutes, stirring occasionally.
  4. 4. In a separate bowl, mix 1 cup of cottage cheese, 1/4 cup of grated parmesan cheese, 1/2 cup of finely chopped spinach, 1/2 teaspoon of pepper, and 1 egg until well combined.
  5. 5. Preheat your oven to 375°F (190°C). Cook lasagne sheets in boiling water according to package instructions, then drain and lay them flat on a clean surface.
  6. 6. Spread a thin layer of the cottage cheese mixture onto each lasagne sheet, then roll them up tightly.
  7. 7. Pour a thin layer of the tomato sauce into the bottom of a baking dish. Place the lasagne rolls seam-side down in the dish, then pour the remaining sauce over the top.
  8. 8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the rolls are heated through and the sauce is bubbling.
  9. 9. Garnish with additional parsley if desired and serve hot.
