Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a skillet, melt 3 tablespoons of butter over medium heat. Add 1/2 cup finely chopped onion and 1/4 cup diced red pepper. Sauté until softened, about 5 minutes.
  3. 3. In a large mixing bowl, combine spinach, the sautéed onion and red pepper mixture, 1 1/2 cups shredded mozzarella cheese, 3/4 cup ricotta cheese, and 3/8 cup grated parmesan cheese. Mix well, then stir in 1 beaten egg until fully incorporated.
  4. 4. In a saucepan, melt 1/4 cup butter over medium heat. Whisk in 1/4 cup all-purpose flour, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper. Cook for 1 minute, then gradually whisk in 1 cup milk and 1/2 cup creme fraiche. Continue whisking until the mixture thickens and comes to a gentle boil. Stir in the remaining 3/8 cup grated parmesan cheese and remove from heat.
  5. 5. Lay out 8 cooked lasagna noodles on a clean surface. Spread about 1/2 cup of the spinach and cheese mixture evenly over each noodle. Roll each noodle tightly and set aside.
  6. 6. Spread a thin layer of the prepared sauce on the bottom of a 2-quart baking dish. Arrange the rolled noodles seam-side down in the dish.
  7. 7. Pour the remaining sauce evenly over the roll-ups, ensuring they are well-coated. Sprinkle the remaining 1/2 cup shredded mozzarella cheese on top.
  8. 8. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 5-7 minutes, or until the cheese is bubbly and golden.
