Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. In a skillet, melt 3 tablespoons of butter over medium heat. Add 1/2 cup finely chopped onion and 1/4 cup diced red pepper. Sauté until softened, about 5 minutes.
- 3. In a large mixing bowl, combine spinach, the sautéed onion and red pepper mixture, 1 1/2 cups shredded mozzarella cheese, 3/4 cup ricotta cheese, and 3/8 cup grated parmesan cheese. Mix well, then stir in 1 beaten egg until fully incorporated.
- 4. In a saucepan, melt 1/4 cup butter over medium heat. Whisk in 1/4 cup all-purpose flour, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper. Cook for 1 minute, then gradually whisk in 1 cup milk and 1/2 cup creme fraiche. Continue whisking until the mixture thickens and comes to a gentle boil. Stir in the remaining 3/8 cup grated parmesan cheese and remove from heat.
- 5. Lay out 8 cooked lasagna noodles on a clean surface. Spread about 1/2 cup of the spinach and cheese mixture evenly over each noodle. Roll each noodle tightly and set aside.
- 6. Spread a thin layer of the prepared sauce on the bottom of a 2-quart baking dish. Arrange the rolled noodles seam-side down in the dish.
- 7. Pour the remaining sauce evenly over the roll-ups, ensuring they are well-coated. Sprinkle the remaining 1/2 cup shredded mozzarella cheese on top.
- 8. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 5-7 minutes, or until the cheese is bubbly and golden.
