  • 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
  • - Nearly Naked Veg Basil 100g
  • 1.5 Kg Best In Plain Flour 1.5 Kg
  • 113G Royal Baking Powder Tin, 113G
  • - Silver Spoon Granulated Sugar
  • 70G Mill & Mortar Citrus Salt Flakes, 70G
  • - Ktc Vegetable Oil

Instructions

  1. 1. In a large mixing bowl, combine 1 cup of flour, 1 teaspoon of baking powder, 1 teaspoon of sugar, 3/4 teaspoon of salt, 1 tablespoon of finely chopped onion, 1 tablespoon of chopped parsley, and 2 tablespoons of chopped fresh basil.
  2. 2. Add 1 beaten egg and 28 ounces of finely chopped or crushed tomatoes to the dry ingredients. Mix gently until just combined; do not overmix.
  3. 3. Heat 3/4 inch of oil in a deep skillet to 360°F (180°C).
  4. 4. Drop the batter by tablespoonfuls into the hot oil, frying in batches. Cook each fritter for about 2-3 minutes per side, or until golden brown, turning once.
  5. 5. Remove the fritters from the oil and drain on paper towels to remove excess grease.
  6. 6. Serve warm as a side dish or appetizer. These fritters can be kept warm in the oven at a low temperature for up to 2 hours.
