Instructions

  1. 1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. 2. Heat 2 tablespoons of oil in a medium skillet over medium heat.
  3. 3. Add 1 cup of finely chopped onion and cook, stirring occasionally, until soft and golden, about 5 to 6 minutes.
  4. 4. Stir in 1 minced clove of garlic and cook for 30 seconds until fragrant. Remove the skillet from heat.
  5. 5. In a large bowl, whisk together 4 eggs and 1/2 cup of milk until well combined.
  6. 6. Squeeze out any excess moisture from 500 g of cooked spinach and add it to the egg mixture.
  7. 7. Stir in the cooked onion and garlic mixture, 1 cup of bread crumbs, 1 cup of shredded parmesan cheese, and 1 cup of shredded mozzarella cheese.
  8. 8. Add 1/2 teaspoon of mixed herbs, 1/4 teaspoon of rosemary, and 1/2 cup of chopped fresh parsley. Mix everything thoroughly.
  9. 9. Pour the mixture into the prepared baking dish and spread it out evenly.
  10. 10. Bake in the preheated oven for 40 minutes, or until the top is set and lightly golden.
