Instructions
- 1. Cut the eggplant into small cubes and set aside.
- 2. Heat 2 tablespoons of olive oil in a 4-quart saucepan over medium-high heat. Add the cubed eggplant and cook until softened and lightly browned, about 8-10 minutes, stirring occasionally.
- 3. Add 1/4 teaspoon of red chili flakes and 1/2 teaspoon of smoked paprika to the pan, stirring to coat the eggplant evenly with the spices.
- 4. Stir in 1/4 cup of chopped olives and cook for another 2 minutes to combine the flavors.
- 5. Meanwhile, cook 1 pound of linguine in a large pot of salted boiling water according to package instructions. Reserve 1/2 cup of pasta water before draining.
- 6. Add the cooked linguine to the saucepan with the eggplant mixture. Toss to combine, adding reserved pasta water a little at a time to create a silky sauce.
- 7. Remove from heat and stir in 1/4 cup of chopped fresh parsley. Adjust seasoning with salt and pepper to taste.
- 8. Serve hot, garnished with additional parsley if desired.
