Instructions
- 1. In a large bowl, combine 2 cups of bread crumbs, 1 tsp of black pepper, 1 tsp of paprika, 1 tsp of oregano, 1/2 tbsp of oregano, 1 tsp of basil, 1 tbsp of garlic powder, and 2 tbsp of grated parmesan cheese.
- 2. In another bowl, beat 1 egg with 3/4 cup of milk until well combined.
- 3. Slice 2 zucchinis into rounds approximately 1/8 inch thick.
- 4. Dip each zucchini slice into the egg mixture, ensuring it is fully coated, then dredge it through the breadcrumb mixture, pressing gently to adhere.
- 5. Heat 2 cups of oil in a deep skillet over medium heat. Once the oil is hot, fry the coated zucchini slices in batches for 2-3 minutes on each side, or until golden brown and crispy.
- 6. Remove the fried zucchini slices and place them on a plate lined with paper towels to drain excess oil.
