Instructions
- 1. Cook 6 lasagna noodles in boiling water according to the package instructions. Drain and let them cool slightly, then cut each noodle in half widthwise.
- 2. In a pan, cook 2 cups of fresh spinach over medium heat until wilted. Drain any excess liquid and chop finely.
- 3. In a mixing bowl, combine 2 cups ricotta cheese, 1/4 cup shredded mozzarella cheese, 1/4 cup grated parmesan cheese, the cooked spinach, 1 egg, 1 1/2 teaspoons italian seasoning, and a pinch of salt. Mix well to form a uniform filling.
- 4. Place 2 to 3 tablespoons of the cheese and spinach mixture in the center of each noodle piece. Roll the noodles tightly around the filling to form rolls.
- 5. Spread 1 cup of tomato sauce evenly on the bottom of a baking dish. Arrange the stuffed pasta rolls seam-side down in the dish.
- 6. Pour the remaining 1 cup of tomato sauce over the rolls and sprinkle an additional 1/4 cup of shredded mozzarella cheese on top.
- 7. Preheat your oven to 350°F (175°C). Bake the dish for 20 to 30 minutes, or until the cheese is melted and bubbly.
- 8. Remove the dish from the oven and let it rest for 5 minutes before serving.
