Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Prepare 10 oz of spinach as directed on the package, then drain it thoroughly to remove excess moisture.
  3. 3. In a large mixing bowl, combine 1 cup of almond flour with the prepared spinach, 1 lb of ground beef, 1 egg, 1 tsp of salt, and 1 tsp of finely chopped onion. Mix everything together until well combined.
  4. 4. Shape the mixture into four 1-inch thick round patties and place them on a baking sheet lined with parchment paper.
  5. 5. Bake the patties in the preheated oven for about 15 minutes, flipping them halfway through, until they are cooked to your desired doneness.
  6. 6. While the patties are baking, slice 4 oz of mozzarella cheese into four even slices.
  7. 7. Once the patties are nearly done, place a slice of mozzarella cheese on top of each patty and return them to the oven for 2-3 minutes, or until the cheese is melted.
  8. 8. Toast 4 almond flour muffins and keep them warm.
  9. 9. To assemble, place each patty on the bottom half of a toasted muffin and cover with the top half. Serve immediately and enjoy!
