Ingredients

  • - Tamicon Tamarind Concentrate 200g
  • - Asafoetida Bwfo Free Uk Mainland P&P
  • - Rajah Whole Red Chillies
  • 100 G Jumbo Garlic 100g
  • 100G Fresh Spices Fresh Small Green Chillies
  • 100G Greenfields Brown Mustard Seeds, 100G
  • 100G Natco Cumin Seeds, 100G
  • 300G Shana Shredded Coconut
  • 400G Trs Italian Plum Peeled Tomatoes 400G
  • 1 Kg Red Onion 1kg
  • 100 G Saras Turmeric Haldi Powder
  • 1 L Crisp N Dry Oil
  • - Tata Salt

Instructions

  1. 1. In a blender, combine the shredded coconut, garlic cloves, and green chillies. Add a splash of water and blend into a smooth paste. Set aside.
  2. 2. Heat 1 tablespoon of Crisp N Dry Oil in a pan over medium heat. Add the chopped fresh tomatoes and cook for 5–7 minutes, stirring occasionally, until they soften and become mushy. Remove from heat and allow to cool slightly, then blend into a smooth puree. Set aside.
  3. 3. Heat the remaining oil in a large pan or kadai over medium heat. Add the brown mustard seeds and let them splutter. Then add the cumin seeds, asafoetida, and whole red chillies. Sauté for 30 seconds until fragrant.
  4. 4. Add the prepared coconut, garlic, and green chilli paste to the pan. Cook for 2–3 minutes, stirring frequently, until the raw smell disappears.
  5. 5. Stir in the turmeric powder and mix well. Add the tomato puree and combine thoroughly. Let the mixture simmer for 5 minutes, stirring occasionally.
  6. 6. Add the tamarind concentrate and mix well to incorporate. Adjust the consistency of the curry by adding a little water if needed. Let it simmer for another 3–4 minutes to balance the flavors.
  7. 7. Taste and adjust seasoning with regular salt as needed. Turn off the heat and garnish with freshly chopped coriander leaves before serving.
