Ingredients
- 500G Ghee, 500G
- 450G Heera Jaggery Unrefined 450g
- - Natco Cardamom Powder
- 1.5 Kg Bacheldre Organic Stoneground Strong Wholemeal Flour, 1.5Kg
Instructions
- 1. In a large mixing bowl, combine 1 cup of wholemeal flour, 1/4 cup of semolina (optional for extra crispiness), and 1/4 cup of grated palm sugar.
- 2. Add 1/4 tsp of cardamom powder and mix well to ensure the palm sugar is evenly distributed.
- 3. Heat 2 tbsp of ghee until melted and pour it into the flour mixture. Rub the ghee into the flour using your fingertips until it resembles a coarse crumbly texture.
- 4. Gradually add 2-3 tbsp of water or milk (as needed) and knead into a firm but pliable dough. Cover and let it rest for 15 minutes.
- 5. Divide the dough into small portions and shape them into smooth balls. Flatten each ball slightly and use a wooden mold or a fork to create patterns on the surface, if desired.
- 6. Heat oil or ghee in a deep frying pan over medium heat. Once hot, reduce the flame to low-medium and carefully add the prepared thekua pieces.
- 7. Fry the thekua in batches, ensuring not to overcrowd the pan. Turn occasionally and cook them evenly until they are golden brown on both sides.
- 8. Remove the thekua with a slotted spoon and place them on a paper towel to drain excess oil. Allow them to cool completely before serving or storing.
