Instructions

  1. 1. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the cubed tofu and pan-fry until golden on all sides, about 5-7 minutes. Remove and set aside.
  2. 2. In the same pan, heat the remaining oil. Add cumin seeds and asafoetida, letting them sizzle for 30 seconds until aromatic.
  3. 3. Add the chopped tomatoes, turmeric powder, coriander powder, and red chili powder. Cook for 5-6 minutes, stirring occasionally, until the tomatoes soften and the spices are fragrant.
  4. 4. Add the sliced cabbage and bell pepper to the pan. Stir well to coat the vegetables with the spice mixture. Cover and cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.
  5. 5. Stir in the fried tofu, garam masala, and salt. Cook for another 2-3 minutes to allow the flavors to combine.
  6. 6. Finish with a drizzle of lemon juice and garnish with fresh coriander leaves. Serve hot as a standalone dish or with steamed rice or flatbreads for a complete meal.
