Ingredients

  • 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
  • - Wholefood Earth Thompson Seedless Raisins
  • 1.5 Kg Natco Fine Semolina, 1.5Kg
  • - Anchor Salted Butter 200g
  • - Jalpur Green Cardamoms Whole
  • 1 Kg Trade Aid Caster Sugar 1kg

Instructions

  1. 1. Heat a pan on medium heat and add 2-3 tablespoons of butter. Allow it to melt completely.
  2. 2. Once the butter has melted, add 1 cup of rava (semolina) to the pan. Stir continuously and roast the rava for 6-8 minutes until it turns golden brown and releases a nutty aroma. Be careful not to burn it.
  3. 3. While the rava is roasting, in a separate saucepan, warm 2 cups of milk on low heat. Do not boil; just heat it until it is warm.
  4. 4. Once the rava is roasted, slowly pour the warm milk into the pan with the rava, stirring continuously to avoid lumps. Be cautious as the mixture may splatter.
  5. 5. Add 1/2 cup of sugar to the mixture and stir well until the sugar dissolves completely.
  6. 6. Crush 2-3 green cardamoms into a fine powder and add it to the mixture. Stir to combine, allowing the cardamom to infuse its aroma into the Sheera.
  7. 7. Add a pinch of saffron (optional) to the mixture for enhanced flavor and color. Stir well to distribute evenly.
  8. 8. Add a handful of seedless raisins and mix them into the Sheera. Let them cook for 1-2 minutes until they plump up.
  9. 9. Turn off the heat and transfer the Sheera to a serving dish. Garnish with chopped and roasted almonds for added texture and flavor.
  10. 10. Serve the Sheera warm and enjoy this traditional Indian dessert!
