Instructions

  1. 1. Heat 2 tablespoons of ghee in a pan over medium heat. Add the vermicelli and roast it, stirring frequently, until it turns golden brown (about 3-5 minutes). Remove the roasted vermicelli from the pan and set aside.
  2. 2. In the same pan, add 1 tablespoon of ghee and the chopped mixed nuts. Sauté them over medium heat until they turn golden brown and aromatic (about 2-3 minutes). Remove the nuts from the pan and set aside.
  3. 3. In a separate large pot, bring 2 liters of milk to a gentle boil over medium heat, stirring occasionally to prevent scorching. Once boiling, add the roasted vermicelli and cook for 8-10 minutes, stirring frequently, until the vermicelli softens.
  4. 4. Reduce the heat to low and add 1/2 cup of icing sugar, 1/4 teaspoon of cardamom powder, a pinch of saffron strands, and 1/2 cup of chopped dates or mixed dried fruits. Stir well and simmer for 5-10 minutes, allowing the flavors to meld.
  5. 5. Add the sautéed nuts to the milk mixture and cook for an additional 2-3 minutes, stirring gently to combine. Remove from heat.
  6. 6. Let the Sheer Khurma cool to room temperature (about 30-40 minutes). Garnish with additional chopped nuts and dried fruits before serving. Serve warm or chilled, as desired.
