Ingredients
- 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
- 120G Alpenzu Clarified Butter, 120G
- 450G Rose Rice Flour, 450G
- NaN Idhayam Mantra Groundnut Oil
- 1 Kg Tate & Lyle Granulated Sugar 1Kg
Instructions
- 1. In a mixing bowl, combine 1 cup of rice flour, 1/4 cup of fondant icing sugar, and a pinch of smoked sea salt. Mix well.
- 2. Add 2 tbsp of melted ghee to the dry ingredients and rub the mixture with your fingers until it resembles breadcrumbs.
- 3. Gradually add 1/4 cup of milk and knead the mixture into a firm dough. Cover the dough and let it rest for 15 minutes.
- 4. Roll out the dough on a flat surface to a thickness of about 1/4 inch. Use a knife or a pizza cutter to cut the rolled dough into small diamond or square shapes.
- 5. Heat cooking oil in a deep frying pan over medium heat. Once the oil is hot, carefully drop the cut dough pieces into the oil in batches.
- 6. Fry the shankarpali on low to medium heat, stirring occasionally, until they puff up and turn golden brown. Remove them with a slotted spoon and drain on a paper towel.
- 7. Allow the shankarpali to cool completely before serving or storing them in an airtight container.
