Ingredients
- - Cofresh Whole Green Chilli 350g
- 1 Kg Tomatoes 1kg
- 250 G Jaimin Ratlami Sev 200g
- 50 G Vandevi Asafoetida 50g
- 500G Ghee, 500G
- 100G Greenfields Brown Mustard Seeds, 100G
- 65G Natoora Root Ginger
- 100 G Saras Turmeric Haldi Powder
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Heat a pan on medium flame and add 2 tablespoons of clarified butter.
- 2. Once the butter is hot, add 1 teaspoon of brown mustard seeds and allow them to splutter.
- 3. Add a pinch of asafoetida powder, followed by a few curry leaves and a green long chilli slit in half.
- 4. Add 1 teaspoon of finely chopped root ginger and sauté until the raw aroma disappears.
- 5. Add 3 cups of chopped tomatoes to the pan and stir well.
- 6. Sprinkle 1 teaspoon of turmeric powder and mix to combine.
- 7. Add salt to taste and mix well.
- 8. Cover the pan and let the tomatoes cook for about 10-12 minutes or until they are soft and mushy.
- 9. Add 1 tablespoon of jaggery powder to balance the tartness of the tomatoes and mix well. Cook for another 2-3 minutes.
- 10. Turn off the heat and transfer the tomato mixture to a serving bowl.
- 11. Just before serving, top the tomato mixture with sev for a crunchy texture.
