  • 1.5 Kg Natco Rice Flour, 1.5Kg
  • 750 G Top-Op Table Salt Drums

  1. 1. Begin by preparing the rice flour. If using glutinous rice flour, sift it to remove any lumps. Note: Traditional Puttu uses non-glutinous rice flour, but this can be used as a substitute.
  2. 2. In a mixing bowl, combine the sifted rice flour with a pinch of salt. Gradually add water, a little at a time, and mix until the flour becomes moist and crumbly. The texture should resemble wet sand.
  3. 3. Prepare the coconut by cracking it open and grating the flesh. Set the grated coconut aside for layering in the Puttu.
  4. 4. If you are using a Puttu maker (Puttu Kutti), assemble it by layering the ingredients. Start with a layer of grated coconut at the bottom, followed by a layer of the moistened rice flour mixture. Repeat the layers until the Puttu maker is filled, ending with a layer of grated coconut.
  5. 5. Steam the Puttu in the Puttu maker for 7-10 minutes, or until the rice flour is cooked through and the Puttu is firm.
  6. 6. While the Puttu is steaming, peel the bananas and slice them into rounds. These will be served as a side or accompaniment.
  7. 7. Once the Puttu is cooked, carefully remove it from the Puttu maker and place it on a serving plate.
  8. 8. Serve the Puttu warm with the sliced bananas on the side. Optionally, sprinkle sugar over the Puttu for added sweetness, if desired.
