Ingredients
- - Cofresh Whole Green Chilli 350g
- 200 G Authentic Greek Yogurt
- 500 G Fresh Vine Tomato 500g
- 100G Greenfields Brown Mustard Seeds, 100G
- - Ground Ginger Catering Size
- 100G Natco Asafoetida, 100G
- 100 G Saras Turmeric Haldi Powder
- 1 L Ktc Sunflower Oil
- - Ktc Gram Flour 2kg
- 100G Natco Kashmiri Chilli Powder, 100G
- 100G East End Garam Masala Powder
Instructions
- 1. In a mixing bowl, combine gram flour (besan), a pinch of turmeric powder, a pinch of mustard seeds, garam masala powder, and a dash of Kashmiri chilli powder. Add water gradually while stirring to form a smooth batter.
- 2. Finely chop the fresh green chilli and roughly chop fresh tomatoes. Set aside.
- 3. Heat cooking oil in a pan over medium heat. Add ground ginger and green chilli, sauté for about 2 minutes until aromatic.
- 4. Add the chopped tomatoes to the pan and cook until they are soft and pulpy.
- 5. Add the prepared gram flour batter to the pan, stirring continuously to prevent lumps. Cook until the mixture thickens and leaves the sides of the pan.
- 6. Grease a plate or tray with some oil and spread the thickened mixture evenly. Allow it to cool completely.
- 7. Once set, cut the cooled mixture into desired shapes (squares or diamonds).
- 8. In a small bowl, mix yogurt with a pinch of salt and a sprinkle of garam masala powder. Serve alongside the cut Pithore pieces.
- 9. Garnish with finely chopped coriander leaves before serving to enhance the flavor and presentation.
