Ingredients

  • - Cofresh Whole Green Chilli 350g
  • 200 G Authentic Greek Yogurt
  • 500 G Fresh Vine Tomato 500g
  • 100G Greenfields Brown Mustard Seeds, 100G
  • - Ground Ginger Catering Size
  • 100G Natco Asafoetida, 100G
  • 100 G Saras Turmeric Haldi Powder
  • 1 L Ktc Sunflower Oil
  • - Ktc Gram Flour 2kg
  • 100G Natco Kashmiri Chilli Powder, 100G
  • 100G East End Garam Masala Powder

Instructions

  1. 1. In a mixing bowl, combine gram flour (besan), a pinch of turmeric powder, a pinch of mustard seeds, garam masala powder, and a dash of Kashmiri chilli powder. Add water gradually while stirring to form a smooth batter.
  2. 2. Finely chop the fresh green chilli and roughly chop fresh tomatoes. Set aside.
  3. 3. Heat cooking oil in a pan over medium heat. Add ground ginger and green chilli, sauté for about 2 minutes until aromatic.
  4. 4. Add the chopped tomatoes to the pan and cook until they are soft and pulpy.
  5. 5. Add the prepared gram flour batter to the pan, stirring continuously to prevent lumps. Cook until the mixture thickens and leaves the sides of the pan.
  6. 6. Grease a plate or tray with some oil and spread the thickened mixture evenly. Allow it to cool completely.
  7. 7. Once set, cut the cooled mixture into desired shapes (squares or diamonds).
  8. 8. In a small bowl, mix yogurt with a pinch of salt and a sprinkle of garam masala powder. Serve alongside the cut Pithore pieces.
  9. 9. Garnish with finely chopped coriander leaves before serving to enhance the flavor and presentation.
