- 1. Soak the Ingredients: Rinse the rice, black dhal with black lentils & coconut cream, and fenugreek seeds separately to remove impurities. Then, soak the rice, black dhal with black lentils & coconut cream, and fenugreek seeds in water for 4-6 hours.
- 2. Grind the Batter: Drain the soaked ingredients. Grind the black dhal with black lentils & coconut cream and fenugreek seeds together into a smooth, fluffy batter using a little water as needed. Transfer to a large bowl. Next, grind the rice into a smooth batter and mix it with the black dhal batter. Add salt and mix well to combine.
- 3. Ferment the Batter: Cover the bowl with a lid and place it in a warm spot to ferment for 8-12 hours. The batter should rise, become airy, and develop a slightly tangy aroma, indicating successful fermentation.
- 4. Cook the Dosa: Heat a non-stick or cast-iron tawa (griddle) over medium-high heat. Once hot, pour a ladleful of batter onto the tawa and quickly spread it in a circular motion to create a thin crepe. Drizzle a little cooking oil around the edges and cook until the edges lift and the dosa turns golden brown. No need to flip. Fold the dosa and remove it from the tawa. Serve hot with chutneys and sambar.
