  • 500 G Jack'S Cauliflower Florets
  • 400G Daucy Potatoes 400G
  • - Anchor Salted Butter 200g
  • - Chilli Powder Rajah
  • 100 G Saras Turmeric Haldi Powder
  • - Sapna Ginger Garlic Paste 1kg

Instructions

  1. 1. Wash and peel the potatoes, then dice them into small cubes. Similarly, chop the cauliflower florets into small pieces. Set these aside along with the green peas.
  2. 2. In a large pot, add the diced potatoes, cauliflower florets, and green peas. Cover with water and boil until the vegetables are soft and tender. Drain and mash the boiled vegetables lightly, leaving some texture. Set aside.
  3. 3. Heat 2 tablespoons of butter in a large pan over medium heat. Once melted, add 1 teaspoon of cumin seeds and let them sizzle until aromatic.
  4. 4. Add 1 finely chopped onion and sauté until golden brown. Stir in 2 tablespoons of ginger garlic paste and cook for another 1-2 minutes until the raw aroma disappears.
  5. 5. Add 1 can of whole cherry tomatoes to the pan. Use a spoon to crush the tomatoes as they cook. Let the mixture simmer for 5-7 minutes until it thickens.
  6. 6. Stir in 1 teaspoon of turmeric powder, 1 teaspoon of chili powder, and 2 tablespoons of pav bhaji masala. Mix well to combine the spices with the tomato base.
  7. 7. Add the mashed vegetables to the pan and mix thoroughly with the spice-tomato mixture. Add 1 teaspoon of salt (or to taste) and stir well.
  8. 8. Add a splash of water to adjust the consistency of the bhaji, if needed. Let it simmer on low heat for 10-15 minutes, stirring occasionally to prevent sticking.
  9. 9. Just before serving, garnish the bhaji with an additional dollop of butter for extra flavor.
  10. 10. Serve the pav bhaji hot with buttered bread rolls (pav) on the side. Optionally, garnish with fresh chopped onions and a wedge of lemon for added zest.
