- 1 L Crisp N Dry Oil
- 750 G Top-Op Table Salt Drums
- NaN Aashirvaad Atta Chapatti Flour Whole Wheat

Instructions
- 1. Wash and peel the bottle gourd. Grate it finely and set aside. Ensure you squeeze out excess water from the grated bottle gourd to avoid a watery dough.
- 2. In a large mixing bowl, combine the following dry ingredients: gram flour, whole wheat flour, plain flour, turmeric powder, chilli powder, cumin seeds, sesame seeds, sugar, salt, and baking soda. Mix well to ensure even distribution.
- 3. Add the grated bottle gourd to the dry mixture. Gradually add water as needed to form a soft, pliable dough. Knead the dough thoroughly to ensure all ingredients are well incorporated.
- 4. Grease your hands with cooking oil and shape the dough into small cylindrical rolls (muthias). Ensure the rolls are uniform in size for even cooking.
- 5. Prepare a steamer and grease the steaming tray with cooking oil to prevent sticking. Place the muthias on the tray, ensuring they are not overcrowded. Steam the muthias for 15-20 minutes or until they are firm and cooked through. Remove from the steamer and let them cool slightly.
- 6. Heat cooking oil in a pan for tempering. Add mustard seeds and allow them to crackle. Then, add asafoetida, green chilli (sliced or chopped), and coriander leaf. Stir for a few seconds until aromatic.
- 7. Add the steamed muthias to the pan and gently toss them in the tempering mixture to coat evenly. Cook for 2-3 minutes on medium heat to enhance the flavor.
- 8. Serve the muthias warm, garnished with additional coriander leaf if desired. Enjoy this delicious steamed snack with chutney or yogurt.
