- 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
- 500 G Organic Chopped & Roasted Almonds
- NaN Khanum Pure Vegetable Ghee
- - Ktc Gram Flour 2kg
- - Schwartz Saffron Jar
- 1 Kg White Granulated Sugar
Instructions
- 1. Begin by lightly roasting 1 cup of gram flour (besan) in a heavy-bottomed pan over low heat, stirring continuously to prevent burning. Roast until the flour turns golden brown and releases a nutty aroma, which should take about 8–10 minutes. Remove from heat and set aside.
- 2. In the same pan, add 1 cup of melted ghee (clarified butter) to the roasted gram flour. Mix well and cook the mixture on low heat, stirring continuously, until it becomes smooth, shiny, and lump-free. This process helps the ghee and flour combine evenly.
- 3. In a separate saucepan, combine 1 kg of white granulated sugar with 1 cup of whole milk. Heat the mixture over medium heat, stirring until the sugar dissolves completely. Continue to simmer until the syrup reaches a one-string consistency (approximately 110–115°C or 230–240°F on a candy thermometer). If you do not have a thermometer, test by dipping a spoon into the syrup and pressing the syrup between your thumb and forefinger; it should form a single thread when pulled apart. Remove from heat.
- 4. Gradually pour the hot sugar syrup into the gram flour and ghee mixture, stirring continuously to ensure the syrup is fully incorporated and no lumps form. Cook the mixture on low heat for another 2–3 minutes until it thickens slightly.
- 5. Add a pinch of saffron to the mixture for flavor and color. Stir in a handful of chopped almonds to enhance the texture and taste. Mix well to distribute the almonds evenly.
- 6. Grease a flat tray or plate with a small amount of ghee. Pour the Mohan Thal mixture into the tray and use a spatula to spread it evenly, ensuring a smooth surface.
- 7. Allow the Mohan Thal to cool at room temperature until it sets and hardens, which may take 1–2 hours. Once fully set, cut it into squares or diamond shapes and garnish with additional almonds if desired. Serve and enjoy!
