Ingredients

  • NaN Khanum Pure Butter Ghee
  • 1 Kg White Granulated Sugar
  • - Natco Cardamom Powder
  • NaN Aashirvaad Atta Chapatti Flour Whole Wheat

Instructions

  1. 1. In a large mixing bowl, combine 500g of wheat flour and 200g of semolina flour.
  2. 2. Add 250g of melted clarified butter to the flour mixture and mix well until the mix has a crumbly texture.
  3. 3. Gradually add water to the mixture and knead to form a smooth and firm dough.
  4. 4. Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. 5. In a small bowl, mix 1kg of white sugar with 2 teaspoons of green cardamom powder, set aside.
  6. 6. After the dough has rested, roll it out into a thin sheet on a clean surface.
  7. 7. Sprinkle the sugar-cardamom mix and toasted white sesame seeds evenly on the rolled-out dough.
  8. 8. Roll the dough tightly into a log and cut it into ½ inch thick pieces.
  9. 9. Heat cooking oil in a deep frying pan on medium heat.
  10. 10. Fry the mathri pieces in batches until they turn golden brown and crispy.
  11. 11. Remove the fried mathri from the oil and place them on paper towels to drain excess oil.
  12. 12. Allow the mathri to cool completely before serving or storing in an airtight container.
