Ingredients

  • - Cofresh Whole Green Chilli 350g
  • - Rajah Jeera Whole Cumin Seeds
  • - Natco Urid Split 500g
  • 250G Ginger - 250g
  • 1 Packet Curry Leaves (1 Packet)
  • 1 L Ktc Sunflower Oil
  • 750 G Top-Op Table Salt Drums
  • 100G Natco Fennel Seeds, 100G
  • 100G East End Black Pepper Whole

Instructions

  1. 1. Soak 250g of urad dal in water for at least 4 hours, then drain.
  2. 2. Grind the soaked urad dal into a smooth batter, adding a little water if needed.
  3. 3. Finely chop fresh green chili and ginger, then add them to the batter.
  4. 4. Add a pinch of fennel seeds, 1 tsp of cumin seeds, and 1/2 tsp of black pepper whole to the batter.
  5. 5. Tear a few curry leaves and mix them into the batter.
  6. 6. Add a small quantity of glutinous rice flour to get a slightly thick consistency.
  7. 7. Add 1 tsp of table salt to the batter and mix well.
  8. 8. Heat cooking oil in a deep pan over medium heat.
  9. 9. Wet your hands, take a small portion of the batter, and shape it into a donut with a hole in the center.
  10. 10. Carefully drop the shaped batter into the hot oil and fry until the medu vadas are golden brown and crispy on all sides.
  11. 11. Remove from oil and place on paper towels to drain excess oil.
  12. 12. Serve hot with chutney or sambhar.
