Ingredients

  • 100 G Natco Ajwain Carom Seeds 100g
  • 100G Chaat Masala Mangal, 100G
  • 600G Ginni'S Roasted And Salted Cashew Nuts 600g
  • 100 G Trs Amchoor Dried Mango Powder
  • - Marnoto Hand Harvest Fine Sea Salt

Instructions

  1. 1. In a mixing bowl, combine 250g of cashew nuts with 1 cup of plain flour, 1 tsp of fine sea salt, 1 tsp of baking powder, and 1 tsp of bicarbonate of soda. Gradually add water, 1 tablespoon at a time, to form a thick paste that evenly coats the cashew nuts. Ensure the mixture adheres well to the nuts.
  2. 2. Add 1 1/2 tsp of dried mango powder, 1 tsp of carom seeds, 1 chopped green pepper, and 1 tbsp of chaat masala to the coated cashew nuts. Mix thoroughly to ensure the spices and green pepper are evenly distributed throughout the coating.
  3. 3. Heat cooking oil in a deep pan or wok over medium heat until it reaches a temperature of approximately 170-180°C (340-360°F). Use a thermometer to monitor the oil temperature for consistent frying.
  4. 4. Carefully drop the coated cashew nuts into the hot oil in small batches, ensuring they do not overcrowd the pan. Fry them for 3-4 minutes, stirring occasionally, until they turn golden brown and crisp.
  5. 5. Remove the fried cashew nuts using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  6. 6. Allow the Masala Kaju to cool completely before transferring them to an airtight container. Store at room temperature and enjoy your homemade snack!
