- 200 G Amul Fresh Malai Paneer 200 G
- 500 G Fresh Vine Tomato 500g
- 1 Kg Red Onion 1kg
- - Greenfields Ground Coriander
- 60G Slivered Almonds, 60G
- 100G East End Cumin Whole Seeds
- 1 Kg Potato Red 1Kg
- 100G Green Chillies - 100g
- 450G Rose Rice Flour, 450G
- 100 G Saras Turmeric Haldi Powder
- 500 Ml Groundnut Oil 500ml
- 400 G Natco Garam Masala Powder 400g
- - Marnoto Hand Harvest Fine Sea Salt
- 190G Natco Garlic & Ginger Paste, 190G
- 100G Natco Kashmiri Chilli Powder, 100G
Instructions
- 1. In a mixing bowl, grate the paneer and combine it with boiled and mashed potato. Add rice flour, half of the ginger garlic paste, and a pinch of fine sea salt. Mix well to form a smooth dough.
- 2. Divide the paneer-potato dough into equal portions and shape them into small balls. If desired, add a small piece of slivered almonds to the center of each ball for added texture and flavor. Roll the balls gently to ensure the almonds are encased.
- 3. Heat cooking oil in a deep frying pan. Once hot, fry the koftas until they are golden brown. Remove and drain on paper towels to remove excess oil.
- 4. In another pan, heat a small amount of cooking oil and add cumin seeds. Once they splutter, add finely chopped onion and sauté until golden brown.
- 5. Add the remaining ginger garlic paste to the pan, sauté briefly, then add finely chopped tomatoes. Cook until the tomatoes are soft and mushy. Blend this mixture into a smooth paste using a blender or immersion blender.
- 6. Return the blended tomato-onion paste to the pan. Add turmeric powder, Kashmiri chili powder, ground coriander, and garam masala. Cook the spices on low heat until the oil separates from the masala, stirring occasionally.
- 7. Stir in cream and a paste made from slivered almonds (blend the almonds with a little water to form a smooth paste). Mix well to create a creamy gravy. Add water to adjust the consistency as needed and bring the mixture to a gentle simmer.
- 8. Season the gravy with fine sea salt to taste. Add fresh coriander leaves for garnish and flavor.
- 9. Gently place the fried koftas into the simmering gravy. Let them cook for 2-3 minutes to absorb the flavors.
