Ingredients

  • 2.27L / 4 Pints British Whole Milk 2.27L / 4 Pints
  • 50G Greenfields Green Cardamon, 50G
  • 1 Kg Natco Brown Basmati Rice, 1Kg
  • 454G Goya Brown Cane Sugar, 454G

Instructions

  1. 1. Rinse 1/4 cup of basmati rice thoroughly and soak it in water for 20 minutes. Drain and set aside.
  2. 2. In a heavy-bottomed pan, bring 4 cups of full-fat milk to a boil over medium heat. Stir occasionally to prevent the milk from sticking to the bottom.
  3. 3. Once the milk starts boiling, add the soaked and drained rice. Stir well and lower the heat to maintain a gentle simmer.
  4. 4. Cook the rice in the milk, stirring frequently, for 20-25 minutes until the rice is soft and the mixture begins to thicken.
  5. 5. Add 1/4 cup of brown cane sugar and stir until it dissolves completely. Adjust the sweetness as per your taste.
  6. 6. Add 1/4 tsp of green cardamom powder and mix well. Let it simmer for another 5 minutes to allow the flavors to blend.
  7. 7. Turn off the heat and stir in 2 tbsp of chopped nuts (like almonds and pistachios) and 1 tbsp of organic fruit & nut mix. Mix well.
  8. 8. Serve the kheer warm or chilled, garnished with additional chopped nuts and a few strands of saffron soaked in 1 tbsp of warm milk.
