Ingredients

  • - Cofresh Whole Green Chilli 350g
  • - Kallo Organic Puffed Rice Cereal
  • 200 G Authentic Greek Yogurt
  • - Natco Urid Split 500g
  • 100 G Combined Packs Of Old India Dried Curry Leaves & Corriander Seeds 100g & 250g
  • 100G Greenfields Brown Mustard Seeds, 100G
  • 200G Top-Op Tamarind 200g
  • 500 Ml Groundnut Oil 500ml
  • 1 Kg White Granulated Sugar

Instructions

  1. 1. In a large bowl, soak urid (urad) split and puffed rice (mamra) in coconut water for about 4 hours or until they are soft.
  2. 2. Drain the soaked ingredients, and grind them into a smooth batter along with Greek yogurt. Allow the batter to ferment overnight or for about 8 hours in a warm place.
  3. 3. Before steaming, add lemon juice, a pinch of bicarbonate of soda, and white sugar to the fermented batter. Mix well until light and airy.
  4. 4. Grease a steaming plate with groundnut oil, pour the batter into the plate, and steam for 10-15 minutes until a toothpick inserted in the center comes out clean.
  5. 5. In a small pan, heat groundnut oil and add brown mustard seeds. Once they start to splutter, add curry leaves, fresh green chilli, and ground paprika powder for tempering.
  6. 6. Pour the hot tempering over the cooked dhokla, allowing the flavors to seep in evenly.
  7. 7. Cut the dhokla into desired pieces and serve warm with your choice of chutney.
