Ingredients
- - Rajah Jeera Whole Cumin Seeds
- 200 G Authentic Greek Yogurt
- - Asafoetida Bwfo Free Uk Mainland P&P
- 1 Kg Red Onion 1kg
- 100G Greenfields Brown Mustard Seeds, 100G
- - Ktc Gram Flour 2kg
- - Marnoto Hand Harvest Fine Sea Salt
- 100G East End Garam Masala Powder
- NaN Trs Haldi Powder Turmeric
Instructions
- 1. In a bowl, mix gram flour (besan) with Greek yogurt, water, and a pinch of asafoetida (hing). Whisk until smooth and lump-free.
- 2. Heat cooking oil in a pan, add brown mustard seeds, cumin seeds, and curry leaves. Allow the seeds to crackle.
- 3. Add chopped red onions to the pan and sauté until they turn golden brown.
- 4. Pour the yogurt-besan mixture into the pan with onions. Stir continuously to prevent lumps, and cook on a low flame.
- 5. Season with fine sea salt and garam masala powder according to taste. Let the kadhi simmer for 15-20 minutes, stirring occasionally.
- 6. To make the pakodas, mix the remaining gram flour with water to form a thick batter. Add salt to taste.
- 7. Heat cooking oil in a frying pan. Drop small spoonfuls of the batter into the hot oil, and fry until golden brown. Remove and drain on paper towels.
- 8. Add the fried pakodas to the cooked kadhi. Let them soak a little before serving.
- 9. Serve hot with steamed rice or roti.
