  1. 1. Gather all ingredients: 1 cup 00 all-purpose flour, 1 tbsp rice flour, 1/4 tsp turmeric powder (for colour), 1/2 tsp baking powder, 3/4 cup water (approx.), 1 cup fondant icing sugar, 1/2 cup water (for syrup), 1/4 tsp cardamom powder, and vegetable oil for frying.
  2. 2. In a mixing bowl, combine 00 all-purpose flour, rice flour, turmeric powder, and baking powder. Mix well to ensure even distribution of ingredients.
  3. 3. Gradually add water to the dry ingredients, stirring continuously to avoid lumps. The batter should be smooth and have a pouring consistency, similar to pancake batter. Set aside for 15-20 minutes to rest.
  4. 4. While the batter rests, prepare the sugar syrup. In a saucepan, combine fondant icing sugar and 1/2 cup water. Heat over medium flame, stirring until the sugar dissolves completely.
