  • 100 G Trs Ground Cumin Jeera Powder
  • 100 G East End Ground Coriander
  • 400 g Trs Turmeric Powder 400G
  • 100 G Natco Paprika Powder
  • - Vandevi Asafoetida 50g
  • NaN Filippo Berio Classico Pure Olive Oil
  • 1 Kg Laila Basmati Rice
  • - Amul Masti Dahi

  • 100G Tata Sampann Garam Masala Tata Sampann Garam Masala, 45g
  • 250 Ml PLJ Lemon Juice Original Sharp 500ml

Instructions

  1. 1. Press the tofu to remove excess moisture, then cut into 2.5cm cubes. Slice the zucchini into thick rounds and cut the bell peppers into similar-sized chunks.
  2. 2. In a bowl, combine the cumin, coriander, turmeric, paprika, asafoetida, and a pinch of salt. Add 1 tablespoon of olive oil and mix to form a marinade. Toss the tofu, zucchini, and bell peppers in the marinade, ensuring even coating. Let it sit for 15 minutes.
  3. 3. While the tofu and vegetables marinate, rinse the basmati rice thoroughly. Cook the rice according to the package instructions, ensuring it’s fluffy and tender. Set aside.
  4. 4. Thread the marinated tofu, zucchini, and bell peppers onto skewers. Heat a grill pan or outdoor grill over medium heat. Brush with the remaining olive oil and grill the skewers for 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  5. 5. In a small bowl, whisk the yogurt with garam masala, lemon juice, and a pinch of salt. Adjust seasoning to taste.
  6. 6. To assemble, divide the cooked rice into serving bowls. Place the grilled skewers on top and drizzle with the spiced yogurt sauce. Garnish with freshly chopped coriander.
