- 1 Kg Laila Basmati Rice

Instructions
- 1. Press the tofu to remove excess moisture, then cut into 2.5cm cubes. Slice the zucchini into thick rounds and cut the bell peppers into similar-sized chunks.
- 2. In a bowl, combine the cumin, coriander, turmeric, paprika, asafoetida, and a pinch of salt. Add 1 tablespoon of olive oil and mix to form a marinade. Toss the tofu, zucchini, and bell peppers in the marinade, ensuring even coating. Let it sit for 15 minutes.
- 3. While the tofu and vegetables marinate, rinse the basmati rice thoroughly. Cook the rice according to the package instructions, ensuring it’s fluffy and tender. Set aside.
- 4. Thread the marinated tofu, zucchini, and bell peppers onto skewers. Heat a grill pan or outdoor grill over medium heat. Brush with the remaining olive oil and grill the skewers for 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- 5. In a small bowl, whisk the yogurt with garam masala, lemon juice, and a pinch of salt. Adjust seasoning to taste.
- 6. To assemble, divide the cooked rice into serving bowls. Place the grilled skewers on top and drizzle with the spiced yogurt sauce. Garnish with freshly chopped coriander.
