Instructions

  1. 1. In a mixing bowl, combine the lemon juice and zest with olive oil, ground cumin, coriander, turmeric, hing, salt, and black pepper. Coat the breasts in this marinade and let it sit for at least 20 minutes.
  2. 2. Heat a grill pan over medium heat and grease it lightly with butter. Grill the marinated breasts for 5-6 minutes on each side until golden brown and cooked through.
  3. 3. In a separate pan, heat 1 tablespoon of olive oil and sauté the diced red bell pepper and cherry tomatoes for 4-5 minutes until slightly softened.
  4. 4. Add the cooked green lentils to the pan with the vegetables. Stir well and cook for another 2-3 minutes to warm through. Season with salt and black pepper to taste.
