- 1 L Arla Lactofree Semi Skimmed Milk Drink
- 200G Anchor Unsalted Butter
- - Jalpur Green Cardamoms Whole
- 1 L Ktc Sunflower Oil
- - Ktc Gram Flour 2kg
- - Schwartz Saffron Jar
- 1 Kg White Granulated Sugar
- 250 Ml Trs Lemon Juice 250Ml
- 227G Arm & Hammer Baking Soda, 227G
Instructions
- 1. In a large bowl, mix 2 cups of gram flour with cold water gradually, whisking until you have a smooth, lump-free batter.
- 2. Melt unsalted butter cubes in a saucepan and allow them to cool slightly. Add this melted butter into the gram flour batter.
- 3. Heat sunflower oil in a deep, heavy-bottomed pan. The oil should be sufficiently hot before proceeding to fry.
- 4. Pour a small ladle of batter into the center of the hot oil through a perforated ladle, allowing it to spread naturally to form a disc.
- 5. Fry each piece of Ghevar until it turns golden brown. Remove from the oil and drain excess oil on paper towels.
- 6. Prepare the sugar syrup by dissolving sugar in water, adding a pinch of saffron, and green cardamom. Boil until a one-string consistency is achieved.
- 7. Once the Ghevar discs are fried, dip them in warm sugar syrup ensuring they are coated evenly on all sides.
- 8. Garnish the soaked Ghevar with rabdi, chopped mixed dry fruits, and a pinch of saffron strands for added flavor and richness.
