Ingredients
- - Cofresh Whole Green Chilli 350g
- 100 G Saras Turmeric Haldi Powder
- 1 Litre Ktc Edible Mustard Oil
- - Ktc Gram Flour 2kg
- 750 G Top-Op Table Salt Drums
Instructions
- 1. In a large mixing bowl, combine 2 cups of gram flour, 1/2 teaspoon of turmeric powder, 1/4 teaspoon of carom seeds, 1/4 teaspoon of baking soda, and 1/2 teaspoon of salt.
- 2. Gradually add 2 tablespoons of mustard oil and mix it into the dry ingredients until the mixture resembles coarse crumbs.
- 3. Slowly add water, a little at a time, and knead the mixture into a soft, pliable dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
- 4. While the dough is resting, prepare the frying oil. In a deep frying pan, heat cooking oil over medium heat until it reaches the right temperature for frying (around 180°C or 350°F).
- 5. Divide the dough into small portions and roll each portion into a thin, elongated strip using your hands or a rolling pin. Ensure the strips are even and not too thick.
- 6. Carefully slide the rolled strips into the hot cooking oil and fry them until they turn golden and crispy. Remove the fafda from the oil using a slotted spoon and place them on a paper towel to drain excess oil.
- 7. For the accompanying chutney, grind green chilies, a handful of dried curry leaves and coriander seeds, 1 teaspoon of sugar, and a pinch of salt into a smooth paste. Add water as needed to achieve the desired consistency.
