Instructions
- 1. Gather all the required ingredients: 500g boneless chicken, 2 tbsp vegetable oil, 1 cup finely chopped onions, 1 tbsp garlic & ginger paste, 1 cup finely chopped tomatoes, 1/2 cup plain yoghurt, 1 tsp turmeric powder, 1 tsp Kashmiri chilli powder, 1 tsp coriander powder, 1/2 tsp cumin whole seeds, 1/2 tsp garam masala powder, 1/4 tsp asafoetida (hing), 2-3 green chillies (slit lengthwise), 1/2 cup fresh coriander leaves (chopped), and salt to taste.
- 2. Wash the boneless chicken thoroughly under cold running water, then pat it dry with a kitchen towel. Cut the chicken into bite-sized pieces and set aside.
- 3. Heat 2 tbsp of vegetable oil in a large, deep pan or kadhai over medium heat.
- 4. Add 1/4 tsp of asafoetida (hing) to the hot oil and let it sizzle for a few seconds.
- 5. Add the finely chopped onions to the pan and sauté until they turn golden brown, stirring occasionally to prevent burning.
- 6. Add 1 tbsp of garlic & ginger paste to the onions and sauté for another 1-2 minutes until the raw smell disappears.
- 7. Add the finely chopped tomatoes to the pan and cook until they become soft and mushy, stirring occasionally.
- 8. Add 1 tsp turmeric powder, 1 tsp Kashmiri chilli powder, 1 tsp coriander powder, and 1/2 tsp cumin whole seeds to the mixture. Stir well to combine and cook for 1-2 minutes to allow the spices to release their aroma.
- 9. Add the chicken pieces to the pan and mix well to coat them evenly with the spice mixture. Cook for 5-7 minutes, stirring occasionally, until the chicken is seared on all sides.
- 10. Add 1/2 cup of plain yoghurt to the pan and mix well to combine. Cook for another 5 minutes, allowing the yoghurt to blend with the spices and chicken.
- 11. Add 2-3 slit green chillies to the pan and mix well. Cover the pan with a lid and let the chicken cook on low heat for 15-20 minutes, stirring occasionally, until the chicken is tender and fully cooked.
- 12. Sprinkle 1/2 tsp of garam masala powder over the cooked chicken and mix well. Turn off the heat.
- 13. Garnish the Andhra Green Chilli Chicken with freshly chopped coriander leaves.
- 14. Serve hot with steamed rice, roti, or naan bread.
