  • 100G Kala Namak - Indian Black Salt, 100G

Instructions

  1. 1. In a mixing bowl, combine 1 cup Samak ke Chawal (Barnyard Millet) flour, 1/2 cup yogurt (dahi), 1/4 tsp Indian black salt (kala namak), and 1/2 cup water. Mix well to form a smooth batter. Let it rest for 15 minutes.
  2. 2. After resting, add 1/4 tsp crushed green chilies and 1/4 tsp cumin seeds to the batter. Mix well.
  3. 3. Grease a dhokla plate or a flat steel plate with 1 tsp oil. Prepare a steamer by adding water and bringing it to a boil.
  4. 4. Just before steaming, add 1/2 tsp fruit salt (eno) to the batter. Gently mix to incorporate, ensuring the batter becomes light and fluffy.
  5. 5. Pour the batter into the greased plate and spread it evenly. Place the plate in the steamer and steam on medium heat for 12-15 minutes or until a toothpick inserted comes out clean.
  6. 6. Once steamed, let the dhokla cool slightly. Cut it into square or diamond-shaped pieces.
  7. 7. For tempering, heat 1 tsp clarified butter in a small pan. Add 1/2 tsp cumin seeds and 5-6 curry leaves. Let them crackle, then pour the tempering over the dhokla pieces.
  8. 8. Garnish with freshly chopped coriander leaves and serve warm with coconut chutney or green chutney.
