Ingredients

  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 1 Kg Ktc Pure Butter Ghee
  • 150 G Fudco Soya Chunks
  • 250G Nice Rice Wholegrain Basmati
  • 400G Koko Dairy Free Plain Yogurt Alternative
  • 100 G Saras Turmeric Haldi Powder
  • - Marnoto Hand Harvest Fine Sea Salt
  • 45G Natco Cinnamon Sticks, 45G
  • 190G Natco Garlic & Ginger Paste, 190G
  • 100G Natco Kashmiri Chilli Powder, 100G
  • 100G East End Garam Masala Powder

Instructions

  1. 1. Rinse 1 cup of wholegrain basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for about 20 minutes, then drain.
  2. 2. Soak 150g of soya chunks in hot water for 10 minutes to soften, then drain and squeeze out the excess water.
  3. 3. Heat 2 tablespoons of ghee in a large pan over medium heat. Add 1 teaspoon of cumin seeds, 2 cinnamon sticks, and sautéing until fragrant.
  4. 4. Add 1 finely chopped onion to the pan and saute until golden brown.
  5. 5. Stir in 1 tablespoon of garlic & ginger paste and cook for 1 minute until the raw smell disappears.
  6. 6. Add chopped tomatoes and cook until it becomes soft, then add 1 teaspoon of turmeric powder, 1 teaspoon of Kashmiri chilli powder, and fine sea salt to taste.
  7. 7. Mix in 1 diced capsicum and the soaked soya chunks, cooking for 2-3 minutes.
  8. 8. Add the soaked and drained wholegrain basmati rice to the pan. Mix gently to combine with the spices and vegetables.
  9. 9. Pour in 2 cups of water, 1 teaspoon of garam masala powder, and 1/2 teaspoon of curry powder. Stir well.
  10. 10. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer for 12-15 minutes until the rice is cooked and water is absorbed.
  11. 11. Fluff the rice gently with a fork and serve hot. Enjoy your Soya Pulao with yogurt or a side salad.
