Ingredients
- - Cofresh Whole Green Chilli 350g
- - Schwartz Coriander Leaf Jar
- 500G Ghee, 500G
- 250 g Jioo Organics Barnyard Millet Samak Ke Chawal 250Gm
- 100G East End Cumin Whole Seeds
- 110G Gourmet Kitchen Himalayan Pink Salt Grinder
Instructions
- 1. Rinse 1 cup of Samak ke Chawal (barnyard millet) thoroughly under running water and soak it in water for 20 minutes. Drain and set aside.
- 2. Heat 1 tbsp of ghee in a deep pan on medium flame. Add 1 tsp cumin seeds and let them crackle.
- 3. Add 2 finely chopped green chilies and sauté for 30 seconds.
- 4. Add 1/4 cup of Picard Organic Ratatouille and 1/4 cup of green peas. Stir and sauté for 2 minutes.
- 5. Add the soaked and drained Samak ke Chawal to the pan. Mix well with the vegetables and spices.
- 6. Pour in 2 1/2 cups of water and season with 1/2 tsp rock salt (sendha namak). Stir everything together.
- 7. Cover the pan with a lid and let the khichdi simmer on low heat for 15-20 minutes, stirring occasionally to prevent sticking.
- 8. Once the millet is cooked and the khichdi reaches a soft, porridge-like consistency, turn off the heat.
- 9. Garnish with 2 tbsp of freshly chopped coriander leaves and serve hot with a bowl of curd or vrat-friendly chutney.
