Instructions

  1. 1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and water to make a soft dough. Knead well and let it rest for about 15 minutes.
  2. 2. Finely chop onions, green chilies, and fresh coriander leaves, and mix them together in a separate bowl.
  3. 3. Add cumin seeds, red chili powder, garam masala, and salt to the onion mixture and combine well to make the filling.
  4. 4. Divide the dough into equal-sized balls.
  5. 5. Take one dough ball and roll it out into a small disc using a rolling pin, dusting with flour as needed.
  6. 6. Place a spoonful of the onion filling in the center of the disc and gather the edges of the dough to seal the filling completely.
  7. 7. Gently flatten the filled dough and roll it out again into a paratha shape, being careful not to tear it.
  8. 8. Heat a tawa or griddle over medium heat and place the rolled paratha onto the hot surface.
  9. 9. Cook the paratha until golden brown spots appear on one side, then flip it and cook the other side, adding a little oil or clarified butter as needed.
  10. 10. Remove the cooked paratha from the tawa and serve hot with yogurt, pickles, or chai.
